Hi, I’m Lacy Bayham. The baker behind Simply Wild Bread Co. What began as a love for simple, honest, ingredients has grown into a cottage bakery where I create homemade, fresh baked, sourdough goods right here in Fannin County, Texas. From traditional sourdough loaves to irresistible cookies, everything I make is crafted in small batches using clean natural ingredients you can feel good about.

Outside the kitchen, I’m a mom and local banker who has fallen in love with the art of sourdough. I find joy in the slow grounding rhythm of working the dough. Baking has become my creative outlet, my quiet place, and my way of sharing something meaningful with my community.

Simply Wild Bread Co. is more than a bakery. It’s a celebration of real food, made with intention, patience, and a whole lot of heart. I’m grateful you’re here and excited to share my bread with you.
